Breakfast Burrito PDF Print E-mail
Ingredients

1 8" fat-free tortilla
2 eggs (beaten) or 1/2 c. low cholesterol egg
2 Tbsp. Diced tomatoes
1 Tbsp. Minced onions
1 Tbsp. Minced green bell peppers
1 Tbsp. shredded fat-free cheese or, a total of 1/3 cup of assorted vegetables, cheese and cooked Meat
2 Tbsp. salsa sauce

Instructions

Pre-heat a 6" omelet pan, spray with pan spray. Stir fry tomatoes, onions, bell peppers or (if desired) assorted vegetables until they are half-cooked. Remove vegetables from pan. Spray with pan spray again and pour in beaten eggs. Cook eggs - pushing cooked portion to the center of the pan. When eggs are half done, add half-cooked vegetables, cheese and salsa sauce. Roll omelet or fold in half and heat for one minute. Warm tortilla and place omelet on tortilla. Roll up or fold tortilla and omelet in half.

YIELD: 1 serving
