Chicken Cutlet Supreme PDF Print E-mail
Ingredients

3/4 ground oat flour
1 tsp. fresh dill, snipped or 1 tsp dried dill weed
1/8 tsp. pepper
1 egg or 1/4 cup egg substitute
1/4 cup water
3 pieces chicken breasts, deboned, skinned, and split
2 Tbsp. vegetable oil margarine, melted

Instructions

1. Heat oven to 350 degrees. Spray baking pan with vegetable oil spray.
2. In shallow dish, combine ground oat flour, dill, and pepper.
3. In another shallow dish, combine egg and water.
4. Lightly pound chicken to even thickness between sheets of plastic wrap or wax paper.
5. Coat with dry ingredients; shake off excess. Dip into egg mixture then coat again with dry ingredients.
6. Place in prepared pan. Drizzle margarine evenly over chicken. Bake 35 minutes.

YIELD: 4 servings
