Chicken with Mushroom Gravy PDF Print E-mail
Ingredients

1 lb. boneless, skinless chicken breast
1 egg white
1/2 cup bread crumbs
1 Tbsp. margarine, melted
8 oz. fresh mushrooms, clean, sliced
1 cup chicken broth, undiluted
1 1/2 Tbsp. cornstarch
1/4 tsp. white pepper (optional)

Instructions

1. Preheat oven to 350 degrees.
2. Combine chicken broth, cornstarch and white pepper (optional). Cook until thickened, stirring constantly.
3. Dip chicken in egg white; coat with bread crumbs.
4. Place chicken on pan sprayed with non-stick spray and drizzle melted margarine or spray butter.
5. Bake for 30 minutes.
6. Remove chicken from oven, add mushrooms and gravy and cover with foil.
7. Bake additional 10-15 minutes until done.

YIELD: 5 servings
