Chinese Chicken Salad PDF Print E-mail

2 chicken breast halves (3 1/2 oz. each)
1/2" piece ginger, fresh
1 head lettuce (1-1 1/4 pounds), shredded
1 cup won tun pi - lightly friend (optional)

1/4 cup sugar
1/4 cup Japanese vinegar
1/4 tsp. black pepper
1/4 cup oil


1. Heat sugar, Japanese vinegar and pepper over low heat until sugar dissolves. Cool, then add 1/4 cup oil.
2. Cook chicken in a little water and ginger. Cool then shred.
3. Right before serving, mix chicken, lettuce and won tun pi (broken into small pieces). Pour on salad dressing and mix well.

YIELD: 8 servings
