Mandarin Chicken Salad PDF Print E-mail
Ingredients

8oz cooked, diced skinless chicken breast
2T + 2t lemon juice
1 c diced celery
3 T minced onion
1/4 c lowfat mayonnaise
1 11oz can mandarin oranges, drained
1 c seedless grapes, cut in half

Instructions

Combine chicken, lemon juice, celery, onion, mayonnaise. Chill. Add oranges and grapes and toss until well mixed. Serve on lettuce leaves. Sprinkle with paprike for color. Add pepper to taste. Serves 4.
